For Eva Phillips, Little Mexico began with family, resilience, and the one thing she knew best: cooking.

Eva opened her restaurant in 1998 after her husband was killed in a car accident, leaving her with two young children to raise. She turned to what she knew, making the kind of homemade food she had always cooked for her own family.

More than 25 years later, that same philosophy remains at the heart of Little Mexico. Everything is made from scratch, with an emphasis on simple, home-cooked food rather than anything fancy.

Over the years, Eva has welcomed guests from across the country and beyond, including loyal customers who travel out of their way to return to her little restaurant. What once made Eva self-conscious about having a small, unassuming place has become one of the things she is most proud of.

For Eva, Little Mexico isn't about being fancy. It's about making good food, welcoming people to her table, and creating something of her own.
